not sure if anyone has posted this here before. We have a lot of national forests here in the North Eastern Tennessee area. In most of the forests, there are forest service roads, trails and other routes to get from point A to point B. In trying to lay out some good training rides on these out of the way places, I came across this site that is provided by the forest service. The PDFs are really good quality and you can enable or disable layers to get rid of things that you don't want to see. It also has a tool for giving pretty exact latitude and longitude based on cursor position. So far, I've found a number of new routes that I never knew existed. Hope someone can find it useful for their area.

Here is another good resource courtesy of BLM.

http://www.geocommunicator.gov/blmMap/MapLSIS.jsp  You can control layer density and go all the way down to topographic contours without the bother of map edges or white spaces. As you move closer in scale, it goes from meters to feet.  very nice stuff though may not always be real current.

this link is very useful because you can look at historical topographic maps, back to the 1940-50 range and pick up old trails that are not shown on current maps.  I don't care for the most up to date topo maps so generally use Forest Service link in this thread or the BLM link above.

You can use the FS PDF maps on your phones with the free "Avenza PDF Map" app. Gives you GPS location and waypoints and stuff like that too.
