Have you checked out the
Cogburn rack? I was checking one out at my LBS and it seems well made and sturdy, and adaptable enough to carry a number of different items securely.
As far as packing meat out, I've heard of some folks using BOBs and such. Obviously depends on terrain. Even if you just pack quarters out seperately in a hunting pack, as you might if you were hunting on foot, it's still going to be faster on a bike.
