I've never had it happen to me but frequent things I hear that work are 1) a big squirt with water allegedly works quite well - breaks up the "chase" trigger 2) any loud noises, whether from you or a bell/horn/clapping etc 3) a swift kick with a foot (would be my last resort for numerous reasons)
In general dogs respond more to facial features than people think so you want to look just as scary and angry as they do. Loud low pitched voice etc. Anything that is the opposite of what you'd do to be playful with a dog.

if the dog looks like it wants to fight i'll turn around as fast as i can and sprint back at it as aggressively as i can. if it's just bored and chasing stuff usually telling it to go home works. i've been nipped a few times and bike shoe to the snout works really well.

yelling first to "go home."
then spray with bottle, if i have one. I don't usually when bikepacking and carrying a bladder. i've spit a mouthful with success, but they are pretty close by then.
charging with the bike works too. this weekend i was faced with a dog that wanted to go! yelling caused him to slow down. but as I turned my head to look forward (breaking eye contact) he started up again. after 2 or 3 times of this, I whipped the bike around and chased him. he went home.

rocks in the pockets.. I've found if a dog is chasing you then they are used to being mistreated to some extent. Raising your arm really quick like you are going to hit them or throw something sometimes works well even if it's a bluff and you're firing blanks.

I kick it in high gear and try to out run them. If that does not work I yell and give a little squirt from my water bottle and as a last resort a kick in nose...

Dog spray in a small aerosol can. Always effective!
