I have thought about switching to a rigid fork which should make things easier.

I'm not an expert on the topic (but I AM on the internet), but I predict buying a new fork and a rack for the fork would be more expensive than an Old Man Mountain rack.  Ohh... There is a Blackburn rack that is only 45 dollars.  70 dollars gets you a gigantic basket too (I must be bored...).  https://www.blackburndesign.com/racks/front-racks.html
Those are sweet! I like that I can try them on the back or front. And the price is spot on for what I want to spend on this old bike. (Getting a new bike for the trails come spring, but this is great around town.) Switching to a rigid fork interests me mostly because I just am not happy with the current forks performance and keep it super stiff most of the time. I was thinking about it before i even started considering panniers.
As for panniers on the weehoo itself, the next size up comes with some, but I'll probably want to use them for her stuff.

Two dry bags directly under the seat.

Thanks guys, i did manage to squeeze a large seat bag into the mix, and that works pretty well for holding some diapers, wipes, and some tools. And I do ride with a backpack. I'm honestly a little nervous about front panniers, but I'll give them a shot. I have thought about switching to a rigid fork which should make things easier. I doubt we will do anything overnight, but  runs to the grocery store would be easier with some extra capacity.

Out to pick up peppers for the christmas roast.

This is my current setup for when i ride with my young daughter. I would like to start running panniers, but am unsure of what rack I'll need. I'm worried about the rack and the weehoo colliding particularly when I go over quick rolls. (I have had issues with tire collisions on really sharp stuff.)
