SKS Chromoplastic fenders / mudguards are very well made and generally easy to fit, BUT you may find you need to take a hacksaw to the stays to get them to fit properly. Peter White sells these, currently running one up front on my hack / commuter (only working bike at the moment :-( ) and it's doing a great job.
Anyone not wanting a 'full' fender / mudguard set but want something to keep flying mud and spray off them and their luggage could do a lot worse than take a look at the Zefal Classic MTB Mudguard Set:
