Suggestions on type of bike

Over the past couple of months I have been accumulating the gear I need to head off on a few multi-day rides and planned to use my Gary Fisher Superfly 29er. It was stolen earlier this week along with my road bike so I'm heading out to unexpectedly buy new bikes once the insurance company settles. The road bike will be an easy decision for me but I'm not sure about the mountain bike from a bike-packing perspective. I loved the Superfly and it coped with everything from single tracks to long single day rides mostly on firetrails etc and with a change of wheels and tyres, I even ride it home from the office a couple of times a week.
My only concern was that it was Carbon and I have been thinking about buying a Ti frame and building up a bike?
Any suggestions on what makes a good bike for bike-packing??
