I was wondering what some of you more experienced guys consider to be the cut off for max weight in a day pack and still be able to ride technical stuff and Have fun.

I'd say 20 is about the upper limit for me, whether day riding or bikepacking. <15 is better. That's with water -- ~3L or so.

15 lbs for me. I can do over that but I'm not real happy about it. If it's all water (like ~6L) then I can be a little more tolerant since it disappears.

20 lbs. is about max. for me too, any more than that and bunny hops and such get to be awkward, or impossible. I much prefer to keep it closer to 15, if possible. I'm 5'8 about 140 lbs if that matters.
DaveC brought up a great point about having a good pack. I've had packs that carried like crap with 15 lbs, but my current packs, Wingnut Adventure or my home-made Frankenpack (made from a roll-top dry bag) carry 20 just fine.
