My 'small' camera is a Canon 770IS.  It's about as small as they get, and IIRC, it was about $200.  Doesn't take AA's, though, so for bikepacking you'd have to carry the charger or be limited to a few days of pics.  I've used it on ~3 day trips with a single battery.

I have the Canon 880 which I just love. It has a lot of great features and is a good size to carry around, but it also as the special battery so you may need to carry an extra which is what I do. The 770 is nice also.

I love the single color feature on this camera.

i'm using a canon as well. A570IS takes 2 AA's and last forever on lithium, even in bitter cold temps. has a bunch of different modes, including a descent, but not great 'manual' mode.
