Bike Setup - Hyrbid or Road?

Hi All,

new person here - looking at doing some weekend camping trips at some point, and im trying to work out which way to go.

At the moment i have 2 bikes:
1. Specialized Tarmac (carbon) road bike - 23x700 tyres - nice and light bike
2. Giant Cypress hybrid bike - 700 wheels, lots of gears - seems to be overly heavy bike

Wondering what i need to do to convert the Giant Cypress over for bike packing?   or is it better to setup the Tarmac?

I'm half tempted to sell the Giant Cypress and try and get a Gravel style bike. 

i guess these are dumb questions but i dont know where to start.

Lots of questions. Staying on road or wanting to go off road, dirt roads, trails etc? What is the terrain like where you want to go? How fat a tire can you fit on either bike? What kind of gearing is on the Tarmac and how easy is it to add gearing if needed? How much effort and $ do you want to put into one of these vs how much are you willing to spend on a new bike?
