Alright, after hours and hours of research about reviews, deals, prices, forum chatter..  I'm down to just a few options.

Arkel GT-54's  -  The reviews are solid, the price is seriously steep, there are no "deals" to be found, people seem to like 'em, made in Canada.  However I hear they're very heavy, and some feel they have a lot of bells and whistles.  Maybe the GT-42 is a better option? -heck of a lot cheaper.

Lone Peak p 500 / Mount Superior's  -  American made, American company, American materials, Lifetime Warranty, trick mounting set up for more technical riding, lots of room, a couple bags that are around ~10 liters smaller for a bit less money.

There's a set of madden buzzard's with a handlebar bag and pannier rain covers for like 100 bucks or something.  Pretty sweet deal, just can't seem to find a whole lot of information on them.

I think I've ruled out Ortlieb's because I think their mounting system is janky.

Bruce Gordon was a thought until I realized they'd only fit his racks..

So I'm pretty much between Arkels and Lone Peaks...

I'm doing a self supported solo Kokopelli trail ride on a 26" steel hard tail with an OMM Sherpa rear rack.

Find the actual weight of the Arkels.  I am pretty sure they weigh more than my current panniers, tent, sleeping bag and pad combined.  Really.  You could bring a cooler full of beer and still save weight by ditching those for a couple drybags lashed on the sides.  And it will carry more solid.  However, I generally also recommend replacing the beer with a sensible single-malt for a better buzz-to-weight ratio.

Ortlieb mounting system is brilliant. Simple, bomber. Never had an issue in 15 years of commuting and several long tours.

I went with the P-500's from Lone Peak.  In their brownish/olive drab color.  Bought from Wayne and Cormac over at the touring store.  I'm sure I'll be pleased.
