Finally gonna get busy and set up the Krampus, but could use a little advice.  She's a size L, set up 1x9, front fork replaced with White Bros. carbon fork, and otherwise pretty stock.  I've done some homework and looked at some posts and am going with a rear rack/pannier setup as I'm just not a fan of frame/seat bags.  I'm no gram-counter and would rather be slow and properly outfitted than fast and miserable.  It's about the journey, right.  Anyhow, trying to set it up for dirt touring as it's easier to take stuff off than add it to the mix.  Probably going with an Axiom Uni-fit rack as it's one of the only ones I've found that's disc compatible and allows for heel clearance and some brand of waterproof panniers. Planning on strapping the house (tent, bag, pad) to the rack so no trunk bag.  Would like a H2O proof handlebar bag with a phone holder but can't seem to find one I like.  Honestly, I haven't been too impressed with the bar bags I've seen.  Anyway, just getting started and any advice will be appreciated.

I have a set of Ortlieb Gravel panniers, which are smaller than standard touring panniers. They can nearly adjust to any rack, are waterproof, and I've been happy with them.

1x9 gearing? Not sure where you live/ride but that sounds brutal for here in Colorado. 1x10 with a Praxis cassette will get you lower gearing (40 or 42t).

I tried 1x11 on the the older Krampus but chain/tire rub was too annoying
