Newbie here, setting up a old mt bike for bike packing trips. Wondering what is the popular or easy sleeping setup?

I like a bivy with a waterproof floor and breathable top and an UL tarp if it rains. I've been using an 850 fill down bag but will switch to a synthetic quilt this year.
I also see lots of folks using a straight up waterproof bivy.
And if I was looking for comfort... lots of folks like tents such as the tarptent moment.

i use a nemo gogo ex; its a little bigger and a little heavier than some set ups. i like that it can be set up pretty easy and is big enough to change in. it also packs small which i think is important when you are bikepacking and have limited space. if i had more time i might look into a tarp and bivy but that set-up takes a little more time to put things together than i have.
