I'm not looking for model/shape/size suggestions here--just advice on the metal a handlebar is made from.

If you were riding a rigid mountain bike, loaded with a handlebar bag, framepack and rear panniers, day after day after day, and could choose between handlebars:

a) aluminum
b) steel
c) titanium

which material would you choose? (all other things being equal: shape, size, weight and price)

Titanium for sure, has the best vibration damping vs. weight and all that.

Been standard upgrade equipment on all my bikes since the turn of the century.

Titanium.  Durability, weight, damping and no risk of catastrophic failure.  Cost sucks, but so does carbon.
