Hi Wilson,
Good question, but the answer depends on where you're riding. Some tires are better on wet muddy trails (Pacific Northwest), while some are better in dry sandy climates (Utah). What works well in the mountains of Colorado might not work so well in the forests on New Hampshire.
The primary differences between different tires is the tread pattern, rubber composition, width, and durability. There are other differences, of course, but unless you're racing they are less important. You'll need to find a mix of these factors that best match your riding conditions and personal riding style.
I've been riding the Colorado mountains on Continental Mountain King ProTection 2.2, and they seem to be working well as an "all-around" tire. They have decent rolling resistance, good traction, and the sidewalls seem very tough. But every rider seems to have their personal favorite.
Maybe if you post where you ride, others can chime in with more location-specific recommendations!

My partner and I toured the GDMBR last year and used Schwalbe Marathon XR's and I highly recommend them for "touring"

They work surprising well off road.
