Not really fast, and it requires a pot plus a cup/water bottle, but this thing from GSI works well.  It folds flat and is really lightweight. It simulates a #2 Melitta cone, and clips onto most cups/bottles.

for racing I can't be bothered to light up my stove unless absolutely necessary. Usually for touring as well. Sometimes though, I can convince myself to bring an espresso maker. My morning brew at home is the entire contents of a 4 'cup' macchinetta poured over two heaping tablespoons of dark brown sugar. Anything less on the trail would be like drinking water to me.

I would much rather just stick to cold/raw while racing though.

Alright, I'm going to have to try this sometime. I'm too curious! I love strong coffee and I love brown sugar...never thought of combining them like that though.

As my wife and I are coffee roasters, we are super snobs about coffee. I found the AeroPress to be the ultimate in coffee flavor and usability. Yes, it uses paper filters, but I just rinse them and get at least 10 uses out of them. It's relatively small, very durable, easy to clean, and it works for our bikepacking, backpacking, motorcycling and car trips. Check it out.

Via is great for those willing to shell out the cash, but the maxwell house tea bag style singles are great as well. Much stronger and flavorful than the folgers and tasters choice singles. It seems to me having singles or something instant is much easier than adding another piece of gear just to make coffee.

Over here in the UK, if we want something good and fast, we use this stuff and make it strong:

http://www.amazon.co.uk/Percol-Espresso-Instant-Coffee-Pack/dp/B0043PU59E/ref=sr_1_1?ie=UTF8&qid=1299238902&sr=1-1

Best instant I've come across in a long time.

I love my handpresso (http://www.handpresso.com) while touring. I didn't carry it while fast touring or racing,
