I picked up a Mukluk a while back that came with two sets of wheels. One is a DT 370 hubset with HED BAD rims. The other is a DTSwiss S350 hubset with DT Swiss BR710 rims. One set came with a 4.4 inch tire and the other was a studded winter tire. I’d like to keep one fat wheel set and turn the other into something with a more general bikepacking friendly tire. Option A: take one wheel and swap the rim out for something around 29x50mm and a 2.8-3 inch tire. Option B? Can I run a 26x3 inch tire on a 80mm rim? Any thoughts?

I suspect that 80mm would be too wide for a 3" tire. If you have the equipment, you can always relace the wheel with a new rim. I just did that for our mountain tandem. There are a lot of good inexpensive rims out there. SunRingle is what I recently used.

The HED rims are pretty fragile for anything other than soft snow. I'd unlace that set -- or sell them to someone that wants that combo -- and lace something for 3-season use.
Also, I think 50mm is too wide for 3" tires, unless you *really* need the float. And, since you'll have the 26" x fat wheelset, you can use those to float and the other set for firmer surfaces.
I prefer 40mm rims for 3" tires, although if you're bigger/heavier 45mm is OK too.
