Noble Canyon to Cuyamaca is a good one I did about about a month ago: http://chadfbrown.blogspot.com/2009/07/cuyamaca-to-noble-canyon-epic.html

I did it as a day ride, but the routes from around that area are endless. Working on getting info for the Sea to Sea Trail.
