Hey,
  I used to Live in Dallas and rode a lot on the north side of Dallas.  So All the way from KY to Denton, not sure, but...

What I did ride multiple times was From Paris to Farmersville on the NETT (North East Texas Trail)  It's a rails to trail conversion thats mostly done.  Once you hit Farmersville then taking 380 into Denton is very doable.  There is a lot of traffic on 380, but it has good wide shoulders.

The NETT is an option. I haven't been on it since the 2014 Ride Across Texas (RAT). It was not a fun portion of the race. Attached is the 2015 RAT route. It is a kmz file. Unless you want to see the countryside you can cut out parts of the route that add extra mileage. It sticks mostly to back roads beginning in Texarkana, Arkansas and will take you close to Denton (Lake Ray Roberts/Sanger area). There are plenty of towns to fuel up.
