I'm planning on getting out into the Sierras at some point this summer and was looking for some recommended not super technical riding in the area. I would love to spend anywhere from 3-7 days actually in the Sierras, as I'll probably ride to and fro.

Not sure what you are asking.

If you want to ride mostly forest roads there is an infinite number of loops and routes you could string together. 

There are not a lot of long (multi-day) singletracks in the Sierra.  Most of the suitable trails are locked up in designated Wilderness.  If you are willing to drive a bit you can tie together about 300 miles or so of Rails to Trail in NE CA and southern OR.

Yeah, I was looking for something more straightforward than the forest road loops, but oh well. I might just have to get around there and wing it.

This guy started a route between Auburn and Tahoe that sounds interesting.  Also, Tahoe Rim trail would be an option too.
