2 weeks bikepacking around Portland, route suggestions?

Hi,
I'm new to bikepacking and new here!
I'll be in the Portland/west coast area this summer and planning a two-week  bikepacking trip mid june while my husband is working there.
As it's all new to me I'm looking for an easy starter, would say around 500 miles max. Off-road and some single track is welcome, but nothing too technical. Maybe the three rivers route with something extra?
If someone would like to join/guide me that would be awesome too!
