I met Scott up in Alaska and we've kept in touch. He's linking up as much dirt as possible on his way around the world and has some great posts on the areas you are interested in.

Good story
A have cycled some of the same Baja roads he posted about.
A couple of years ago, I walked a good bit of the Road from Gracious a Dios too San Mateo.
He got lucky with his illeagle entry into Guatemala.  It is possible to get; ¨permiso especial,¨ to cross at an isolated point.  Had he been caught, the penalty may have been 7 days in jail and deported.
   
At the moment I am thinking the mountains of northern Oaxaca could be a good place for an adventure.
