Educate me on Dynamo hubs

Please educate me on Dynamo hubs. I’m thinking of building one up for my bike but I'm nervous of it’s durability. What brand are you guys using and how’s it holding up. What I’m nervous most about is how do these hubs survive in the rain, river crossings, and New Mexico mud? Those of you in the 2014 Tour Divide know what I mean, it was brutally wet at the beginning and there were many water crossings to deal with. Do these hub hold up if submerged in water? How easy are the they to service?
Thanks!

I've had really good luck with my Schmidt SON 28 hub (love the Centerlock option) and Bausch & Muller Luxos U headlight/USB charger. I'd like to try a set of K-Lites next.

I'm racing 2016 with SONS and haven't heard of any issues with them due to weather and conditions. If your system is well set up you should have no issues. (K-lite / Sinewave / switch / cache). One guy had his Limefuel cache fail on him - but other caches should be available in some towns. The cache needs to be able to charge and discharge simultaneously.
Being able to ride late/early with loads of light, and being able to recharge the electrics on the go, is a great convenience and time/stress saver.

If you look in the Questions and Answers topic, you'll find an entire thread devoted to Dynamos and Lighting, or a similar title.

That will go a long way in educating you without a lot of repetition.

Happy with my Shimano hub and Exposure Revo. Using a USBwerk to charge. Made my own 3D printed switch housing that mounts to my steerer tube. I've been using a SON on my rando bike since lights were old school bulbs that would blow and you could only run 1 when climbing really slow. The new LED stuff is excellent in comparison.
That other linked thread is probably the best stating point / resource.
