Winter race prep

Hi all,
I'm planning to do my first winter race this year, with the Tuscobia 75 mile event. I've MTB'd for many years, and done winter fatbiking since about 2012; however this will be my first race of any kind on a bike.
How do you train for a 75 mile race in winter? I'm either commuting, MTBing or fatbiking almost every day. I'm up to 50 mile weekend training rides on the fatty each weekend (building up to 75 miles or more) but training in the middle of summer with light weight clothing, clipless pedals and good conditions is a far distant cry from snow biking in the middle of winter.
So whats your training like for winter races?
Thanks in advance for any tips!

For me - lots of beach riding and pushing up big sandhills. I'm racing the ITI in march, and will be coming straight from our Aussie summer
I might spend some time in the chiller room in the shop next door...
