Riding from Mexico to Alaska

My Girlfriend and I are planning a trip from Mexico to Alaska. She will be finishing her portion of the ride in Washington, and from there I will continue to Alaska solo. I am trying to figure out the clothing and most efficient bike set up. We are using Surly Ogre and Troll bikes with frame bags, handle bar roll bags, rear rack with Panniers and a stuff sack on top of the rack. We have most of the gear: tent, sleeping pad, sleeping bag, stove, pot, personal gear, navigation, and a few other comforts.
We are looking for help on the right clothing as far as layering systems, and shoes. We are going to get the handle bar grip covers for our hands, but we haven't seen anything for the feet. I've been looking through other posts and topics, but I haven't seen an actual gear list. Unless I missed something.
